Josephine Simpson, nee Theising, 95, of Fairview Heights, Ill., born April 1, 1916, in Bartelso, Ill., died at 1:40 p.m. on Friday, June 24, 2011, at Collinsville Rehab. and Health Care Center in Collinsville, Ill.



Mrs. Simpson with her husband, Garrett, owned and operated the Simpson (The Happy Cow) Restaurant.



Josephine was preceded in death by her husband, Garrett W. Simpson; and parents, Frank and Rose, nee Bergmann, Theising.



Surviving are her daughters, Carla R. Simpson of Fairview Heights, Ill., and Darsalle M. DeGregory of Prairie Village, Kan.; grandson, Garrett DeGregory of Prairie Village, Kan.; and two brothers, Frank Theising of Breese, Ill., and Joseph Theising of Bartelso, Ill.
